Crumb Topping:
1/3 c. extra fine sugar
1/3 c. brown sugar
1 tsp. cinnamon
1/4 tsp. salt
1/2 c.(1 stick) melted unsalted butter
1 tsp. (or a little less) instant coffee crystals
1 1/2 c. all purpose flour
Muffins:
1 1/2 c. all purpose flour
1/2 c. brown sugar
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. baking soda
1/4 tsp. salt
3/4 c. milk
1/3 c. oil
2 large eggs
Glaze:
1/4 c. powdered sugar
1 tsp. (or a little more if needed) milk

Directions:

Preheat oven to 375º. Line a 12 cup muffin tin with paper liners.
Make the crumb topping; Combine the sugars, cinnamon and salt in a medium bowl. Add the coffee crystals to the melted butter then whisk the butter/coffee mixture into the sugars. Add the flour and stir with a rubber spatula just until moistened. Spread mixture on parchment paper to dry until ready to use.
In a large bowl, combine flour, sugar, baking powder, cinnamon, baking soda and salt. In a large glass measuring cup or another bowl, whisk together the milk, oil and eggs. Pour mixture over the dry ingredients and stir using a rubber spatula just until moist.
Scoop the batter evenly into the muffin tray. Sprinkle the crumb topping evenly over the muffins, gently pressing the crumbs into the batter. Place in the oven and bake 15 - 17 minutes until a toothpick inserted in the center comes out clean.
To make the glaze, combine powdered sugar and milk and whisk until smooth. When the muffins are done, cool for 10 minutes, removed from the muffin pan onto plate or wire rack. Drizzle the glaze over each muffin.
