3 c self-rising flour
1/4 c sugar
1/4 c firmly packed light brown sugar
1/2 c dried currants
1/2 c (1 stick) chilled unsalted butter, cut into pieces
1 c (approx) whipping cream

Directions:
Directions:
Preheat oven to 400 degrees. Butter 2 large and heavy cookie sheets. Sift flour into bowl. Mix in both sugars and currants. Add butter and rub/mix in with finger tips until mixture resembles coarse meal. Stir in enough cream to form soft, slightly sticky dough. Turn dough out onto lightly floured surface and knead until just combined. Roll out to desired thickness; cut out rounds (1 1/2 to 2 inches as desired).

Bake until puffed and golden brown, about 12 minutes. Cool on rack.

Serve plain, or with jam, jelly or cream.
