1 cup water
½ cup red quinoa
1 tbsp canola oil
1 cup diced onion
1 cup finely chopped shiitake or cremini mushroom
1 tsp minced garlic
¼ tsp dried oregano
1 egg
2/3 cup shredded cheese
1/3 cup rolled oats
1 tbsp soy sauce
½ tsp salt (or to taste)

1. Combine water and quinoa into medium saucepan, bring to boil, reduce to simmer, cover and cook for 15 minutes. Remove from heat let stand covered for 10 minutes.

2. Preheat oven 350 and grease/line baking sheet

3. Heat oil in saucepan over med heat, add diced onion and cook until tender.

4. Add garlic, oregano, salt, and mushrooms to the onion mixture, cook until mushroom are soft (about 5 minutes) stir frequently. Let cool about 5 minutes.

5. Beat egg in medium bowl, add quinoa, mushroom mix, cheese, soy sauce and oats into bowl and mix.

6. Start squishing patties together with hands and arranging on baking sheet, patties will firm up in oven. Cook for about 20-30 minutes until crispy.

You can substitute mushrooms with beans for a different flavor, or add red bell pepper into the onion mix!
