Tequila Citrus Chicken Recipe

Ingredients: 10 to 12 breasts, drumsticks and wings. Skin on. Canola oil Salt-and-pepper
The marinade: 1 cup of tequila 1 1/2 cups of freshly squeezed lime juice. 1 cup of freshly squeezed orange juice. 1/2 cup of freshly squeezed lemon juice. 2 tablespoons of chili powder 2 tablespoons of minced jalapeņo peppers without seeds 2 tablespoons of minced garlic 4 spoons of kosher salt 2 teaspoons of fresh cracked pepper

Directions:Combine all the marinade ingredients in a very large bowl and place your chicken parts into the marinade, cover with saran wrap or foil and marinate for a minimum of four hours or better yeah overnight. I like using thighs, drumsticks and wings. Breasts work well but when grilling breasts for short period of time on the grill they have a tendency to dry out and take much longer than the rest of the pieces. If I do use breasts I cut them in half before marinating. They cook quicker and marinate better that way. Your call!
Remove the chicken pieces from the marinade and pat dry. Drizzle your canola oil on the chicken and season with salt and pepper. When I cook them on the grill I start them directly over the coals for a minute or two to get a chard look and crisp the skin and then move them off to the side over medium heat to finish until tender. Be careful not to overcook. Here is where a good quality hand held thermometer comes in really really handy! You can also cook these in your oven. Preheat your oven to 400° and cook for 30 minutes or so turning the chicken pieces once. All ovens are different so you'll have to keep an eye on your chicken and cook until brown and tender being careful not to overcook. |

Notes: This recipe is very nice and bright and it's different! The citrus flavors, tequila and mild heat from the jalapeņos adds a nice zing to the chicken. Great for picnics because you can marinate overnight, quick grill and then throw in a basket and take it anywhere.
