4–5 ham steaks, preferably Virginia smoke ham steaks about a quarter inch thick

Apple chutney:

3 tablespoons of butter
Half an onion diced
One apple Diced
Small handful of raisins. (I like golden raisins)
Tablespoon of dried mustard
1 tablespoon of light brown sugar
I splash of Apple cider vinegar
Pinch of salt if needed

This is a simple breakfast dish that I really like. The ham steaks are nothing fancy. Just choose good Virginia smoke ham steaks and grill them. End of conversation. The apple chutney is the main event. This isn't real chutney, as a matter of fact I don't know why they really call it chutney. It's more like a compote. The first thing you have to do is decide whether you want your raisins rehydrated, soft and mushy or firm and chewy. I like fully reconstituted raisins. If you go this route simply put a handful of raisins in a pan with water to cover and boil for about 20 minutes until the raisins or reconstituted and soft. You can even add a dash of sugar and vanilla to make the raisins taste even better. When they're ready just for off the water and set aside for the main dish. Your call.

Making the dishes simple. In a heavy sauce pan add your butter, apples and onions and sauté until everything is soft. Add all the other ingredients and cook all until all the flavors are incorporated. Your sauce should be thick and heavy and not runny. If it's too thick just add water 2 tablespoons of water. Spoon over the top of your grilled ham steaks.

This is a quick and easy breakfast dish that I really like. I usually serve this was some type of potatoes and eggs. You can play around with the chutney. Add a dash of cinnamon or maybe some coriander or cumin. Find what works best for you and just enjoy!
