1 can shoepeg corn (11 oz.)
1 can black eyed peas (15 oz.)
1 can black beans (15 oz.)
1 large tomato, diced
1 avocado, diced
1/2 c. Diced red pepper
1/2 c. Chopped red onion
1/2 c. Chopped cilantro

DRESSING:
1/4 c. Olive oil
1/4 c. Red wine vinegar
2 cloves garlic, minced
1/2 tsp. cumin
Salt and pepper

Tostadas, scoops

Directions:
Directions:
Rinse beans and peas in strainer, then pour on bowl.
Stir in remaining ingredients.

DRESSING:
Combine all ingredients. Mix well.

Pour dressing on beans/peas mixture.

Serve with tostadas.

Personal Notes:
For fancy fun, scoop bean mixture into individual tostadas. Arrange scoops in a single layer on a serving plate. It should look like caviar.
