1 ¼ c. all purpose flour
¾ tsp. baking soda
¼ tsp. salt
½ c. butter or margarine
1 c. peanut butter
½ c. granulated sugar
½ c. packed brown sugar
1 egg
½ tsp. vanilla

Directions:
Directions:
Preheat the oven to 375º.

Stir together flour, baking soda and salt. In a mixer bowl beat butter for 30 seconds. Add peanut butter and both sugars; beat till fluffy. Add egg and vanilla; beat well. Add dry ingredients and beat till well combined.

Shape dough into 1-inch balls; roll in granulated sugar, if desired, and place 2 inches apart on an ungreased cookie sheet. Flatten each ball slightly by crisscrossing with the tines of a fork.

Bake for about 10 minutes. Cool on pan for 1 minute before removing to a wire rack. Makes 48 cookies.
