1 pound boneless, skinless chicken breast
1/4 cup balsamic vinegar
6 ripe tomatoes, chopped
1/2 cup fresh basil, thinly sliced
2 tablespoons extra-virgin olive oil
2 cloves garlic, minced
1/2 teaspoon sea salt
3 packages angle hair shirataki, rinsed and drained
1/4 cup shaved Parmesan cheese

In a resealable plastic storage bag, combine the chicken and vinegar. Knead to coat the chicken thoroughly, Refrigerate for 1 hour.
Meanwhile, in a large bowl, combine the tomatoes, basil, oil, garlic, and salt. Cover and let stand at room temperature for 1 hour.
Bring a large pot of water to a boil over high heat. Coat a grill rack or broiler rack with cooking spray. Preheat the grill or broiler. Grill or broil the chicken for 7 minutes, turning once, or until a thermometer inserted in the thickest portion registers 165 degrees and the juices run clear. Remove and let stand for 5 minutes.
Cook the angle hair in the boiling water for 1 minute, or until heated through. Drain and pat dry. Divide among 4 plates. Cut the chicken diagonally into thin slices. Place atop the angel hair. Top with the tomato mixture and the cheese.
