Para a torta:
6 ovos grandes
250 g de açúcar
1 colher (café) de fermento
120 g de farinha
Manteiga para untar

Para o creme:
5 colheres (sopa) de açúcar
1 colher (chá) de farinha maisena
5 colheres (sopa) de água
4 gemas
Canela q.b.
Açúcar em pó q.b.

Começar pelo creme: Num tacho, misturar o açúcar com a farinha maizena. Juntar a água e as gemas. Misturar tudo muito bem e levar ao lume, mexendo sempre até engrossar. Retirar do lume e colocar numa tigela. Deixar arrefecer e reservar.
Untar um tabuleiro e forrar o fundo com papel vegetal. Tornar a untar e polvilhar com farinha. Ligar o forno a 180°C.
Numa tigela, bater bem os ovos, adicionando o açúcar aos poucos, até que fique um creme bastante volumoso e esbranquiçado. Juntar depois a farinha já com o fermento e envolver suavemente com o fouet.
Verter este preparado no tabuleiro e levar ao forno durante 30 minutos.
Ao fim desse tempo, retirar do forno, desenformar em cima de um pano de cozinha polvilhado com bastante açúcar em pó.
Barrar com o creme e enrolar a torta.
Depois de arrefecer polvilhar com mais açúcar em pó e fazer uns riscos de canela fazendo quadrados.
