1 lb. shrimp, cleaned, deveined
3 T. olive oil
2 T. butter
3-4 cloves garlic
1/2 c. white wine
1/2 c. water
1/4 c.bread crumbs (optional)
1/4 tsp. oregano
1/2 tsp. basil
1 tsp. fresh parsley
1 small lemon wedge
1/2 tsp. salt
4-6 turns fresh black pepper
1 lb. fettuccine or spaghetti

Directions:

Fill large pot with 6 quarts of salted water, heat while preparing scampi.

In a large frying pan, pour oil, 2 tablespoons of butter and sliced garlic cloves. Saute until golden, but not brown (or it will be extremely bitter).
Add shrimp, white wine, oregano, basil, parsley, juice of lemon wedge, salt, pepper and water.

Cook for 5-8 minutes, or until shrimp turns pink.
Cook fettucini or spaghetti a! dente or desired tenderness.
Drain very quickly (leaving some of the water) and place in large serving bowl.
Pour scampi mixture over top and serve immediately!

I only use bread crumbs lightly and put the rest on the side to use if needed.
