Fill the skillet with about 1 inch of water just enough to submerge the eggs. To actually poach an egg means to cook the egg and a temperature slightly under simmer. Never have your water and a full boil. Crack your eggs into little dishes so that you can gently slide them into the water. You never stir and you always cover the pot or pan. By covering it allows the top of the egg to cook evenly with the bottom. After you have covered the pot turn the heat off and typically about seven minutes later you'll have perfectly poached eggs.
