2 c.cake flour (not self-rising)
1/3 c. cocoa
1 tsp. baking powder
1/4 tsp baking soda
1/4 tsp. salt
6 T. unsalted butter, softened
2/3 c. packed brown sugar
1 large egg
3/4 c. buttermilk
1 tsp. vanilla

Topping:
3 T. unsalted butter, melted
1/4 c. sugar (add more as needed)
2 T. cocoa
1/4 tsp. cinnamon

Directions:
Directions:
Preheat oven to 350º. Coat the cups of 2 mini muffin pans with nonstick cooking spray. In a medium bow, whisk together cake flour, cocoa powder, baking powder, baking soda and salt. In a large mixing bowl, beat softened butter and brown sugar until smooth. Add egg and beat until creamy, about 2 minutes. On low speed, beat in half the flour mixture, then the buttermilk, followed by remaining flour mixture. Stir in vanilla. Divide batter into prepared pans, about 1 T. batter per cup.
Bake at 350º for 12 - 14 minutes. Cool 10 minutes on wire rack. Remove directly to racks to finish cooling. Repeat with second batch.
Topping: Mix sugar, cocoa and cinnamon in a small bowl. Dip duffin in melted butter then roll in topping mix, Allow to finish cooling on wire rack.
