1 - 8oz pkg mild cheddar cheese
1 - 8oz pkg colby cheese
(I buy block and shred it myself)
1 large jar diced pimentos (drained)
Miracle Whip / Real Mayo (I usually do Miracle Whip) (I would start with maybe a cup of Miracle whip/ mayo) add more if you want it creamier.

Directions:
Mix pimentos with cheese after shredded, then add miracle whip.
I never measure, I just keep adding spoonful’s till it is as creamy as I want it!
Sometime the next day I have to add some more miracle whip.

You can put it on crackers or bread or celery! Great to cut in half and put in snack bags and keep in fridge.

Will keep for over a week in the fridge

This recipe goes way back to your Jamma. When I started to her prayer and share group on Tuesday's at the church where she used to go, she would bring these and cucumber sandwich halves for the ladies to have a snack especially in the summer. My mom always bought Price's pimento cheese spread. Your Aunt Kathy taught me how to make them and since we started making it homemade I have NEVER bought "Price's" again. These are also great for taking to shut in's, sick or people in bereavement.
