1 1/2 Pounds of Lean Stew Meat (either purchased or cut from sirloin steak)
Magic Stuff
2 Large Onions coarsely sliced
1/2 cup flour
2 Ounces Olive Oil
3 Stalks Celery cut in one inch pieces
2 Large Potatoes peeled and diced
2 Large Carrots cut in one inch pieces
1 Can Rotel Tomatoes
1 Can Stewed Tomatoes
1 or 2 Bay Leaves
1 Can Mixed Vegetables ( or you can substitute frozen)

Directions:

Place the flour and magic stuff in a large ziplock bag. Heat the olive oil in a large heavy pot or casserole. Place small batches of the stew meat in the flour mixture and fry until browned removing to a pie plate once browned. Complete the process adding oil as necessary. While browning the last batch, add the onions. When all of the meat has been browned, return it to the same pot adding all of the remaining ingredients. It will be necessary to add water to the pot as it cooks to keep it from becoming too thick. It is necessary to stir frequently making sure to scrape the bottom of the pot. Continue cooking for approximately 1 hour on low heat. Serve with crusty garlic bread and a salad.

This is my version of old fashioned stew. When I visited Aunt Marie in Tucson, she would ask me to make this stew and I would put the left overs in small freezer containers for her to take out and heat when she had a hankering.
