3-4 Pound Chuck Roast

1 Large Onion
2 Pounds Peeled and Diced Potatoes
2 Pounds Peeled Carrots cut in 1 inch pieces
1 Package Lipton Onion Soup Mix

Directions:
Directions:
Turn oven on to 350 degrees. Generously sprinkle magic stuff on the chuck roast browning it is a large oven proof pot which can be covered. Remove from stove and cook in the oven uncovered for 1 1/2 hours. Remove from oven and add the onions, potatoes and carrots and onion soup mix adding enough water to cover the vegetables. Cover and continue cooking in the oven for an additional 45 minutes or until the potatoes and carrots are tender. Serve with hot crusty bread, preferably garlic bread.

My Mom was a master at one dish meals. This was one of my favorites. I remember going to the butcher shop with her and paying .29 cents a pound for chuck roast. My how things have changed.
