2-4 Pound Pork Butt
4-5 Shakes of Magic Stuff*(you know what I mean)
2 Ounces Fennel Seeds
1 Large Clove Garlic
2 Pounds Potatoes
2 Pounds Carrots
1 Large Onion
2 Ounces Olive Oil

Directions:
Directions:
Turn the oven on at 350 degrees. Separate the garlic cloves then cut slits in the pork butt and insert the separated garlic in the slits. Sprinkle the Magic Stuff on the pork butt, place it in a heavy oven proof pot and brown it on all sides over high heat on the stove. With the browned pork butt placed fat side up, sprinkle the fennel seeds on the roast and place, uncovered in the oven for 1 1/2 hours. Peel and cube the potatoes and slice the peeled carrots in one inch pieces, soaking in water while the roast is cooking. Chop the onions coarsely. After 1 1/2 hours, remove the roasting pan, add the onions, potatoes, carrots and water to the pan adding enough water to cover the potatoes and carrots. Cover and continue cooking for and additional 45 minutes or until the carrots and potatoes are done.

Mom made this pork dish a couple of times a month as it was inexpensive and very tasty. I continue to make this dish for Carla and me and enjoy it as much today as I did when Mom made it.
