1/4 Cup Yeast in a cup of warm water
1/2 Cup Salt
10 Pounds Flour
1/2 Cup Oil
1/4 Cup Sugar
11 Cups Water +-

Directions:
Directions:
Add the yeast to a cup of warm water and let rest until the yeast has dissolved. Add the dissolved yeast and all of the other ingredients except the water to a large container. Add about half of the water and mix by hand gradually adding the remaining water until the ingredients all come together with a smooth, non-sticky consistency. Dust with flour and cover loosely with a towel until doubled in bulk. Punch down the dough, and make into dough balls covering them once again after dusting with flour. When the dough balls double in size, they may be rolled out to a thin thickness, prick with a fork, add your favorite tomato sauce, ingredients and cheese baking your pizza on a pizza stone in a very hot oven. Manga!

This is a recipe given to me by Al Rinaldi when I first went into the pizza business at Savoy Gardens on then "Dago Hill", now the Hill. It has served me well for many years. You may wish to pare down the recipe for your home use. Enjoy!
