1 small onion diced
garlic (4 or 5 cloves finely diced)
olive oil (2 Tbs.)
3/4 lb. cooking ham cubed
2 or 3 chorizos sliced
3 cans alubia beans or cannellini beans
1/2 pkg. of frozen collard greens
32 oz Chicken Broth
1/2 c. cooking wine

Directions:
Directions:
Place 2 Tbs. of olive oil in a 4 qt. sauce pan. Add the onion, garlic, ham and chorizos and saute till onions are slightly transparent. Add in the cans of beans without draining and the collard greens. Add the chicken broth and cooking wine. Cook for at least 1 hour on med-low heat.

This was my mother-in-law's recipe and I have been tweaking it through the years. She added turnip greens which I feel made it a little bitter.
