30 oz. Tater Tots (small or regular sized)
6 oz. diced Canadian bacon
2 onions - chopped
2 cups shredded cheddar cheese
1/4 cup shredded Parmesan cheese
12 eggs
1 cup milk
4 TBSP all purpose flour
1 tsp salt
1/2 tsp pepper

1. In a greased 5 quart or larger slow cooker, layer 1/3 of the tots, Canadian bacon, onions, cheeses. Repeat twice, ending with the cheeses.

2. In a large mixing bowl whisk together the remaining ingredients and pour them over the ingredients in the slow cooker.

3. Cover and cook on low for 6-8 hours.

This is a recipe that you can take great liberties with. The meat can be diced ham, sausage crumbles, bacon; you can also use whatever cheeses you like. Just be careful with the salt as some things are saltier than others.

When I made it at the 7/2015 Hagfest, I forgot the Parmesan, onions, and the flour. I used diced ham, and upped the quantity of pepper.

When I have used onions I try to use the mildest onion I can find and saute it in bacon fat or butter to soften them up. I think leeks would be nice in this as well.
