10 - 12 large red skin potatoes
8 0z. sour cream
8 0z. package cream cheese
splash of milk
1/2 TB salt (or to taste)
chopped chives (optional)
paprika
1/4 stick butter

Directions:
Directions:
Boil potatoes until tender.
Mash with sour cream and cream cheese, adding a litlle milk until of desired consistency.
Add salt.
Spoon into 13 x 9 in. pan.
Sprinkle with paprika and dot with butter pats.
Refridgerate until ready for use.
Bake at 350 for 1 hour. Uncover last 10 minutes.

Excellent with Dill Chicken and Artichokes. Also, a nice way to have mashed potatoes without all the last minute fuss and mess!
