Ingredients: 3 Idaho Potatoes -peeled and sliced as thin as you can or use mandolin. 3 T. butter 3 T. whole wheat flour 1 1/2 c. 2% milk 1/4 tsp. Penzeys whole West Indian nutmeg, grated 1/2 tsp. Penzeys grey sea salt 1/2 tsp. Penzeys white pepper 1 tsp. Penzeys sweet paprika California style

Directions:Layer the prepared potatoes into a casserole dish that you have sprayed with oil Make a white sauce with the butter, whole wheat flour and 2% milk by melting butter in saucepan . Whisk in flour and continue to whisk for a minute. Gradually, whisk in 1 c. of the milk and continue to stir until mixture begins to thicken. Add rest of milk. Add salt, pepper and nutmeg. Stir for another minute. Pour over potatoes. Sprinkle paprika on top before placing potatoes in a pre-heated 350º oven. Bake 30 minutes and then test with knife. If it goes easily through the potatoes it's done. If the potatoes aren't brown enough put it back for another 10 minutes until golden. |
