1 medium sized sweet potato, peeled and chopped
3 eggs
¼ cup coconut oil, melted
3 heaped tablespoons rice malt syrup or honey
1 teaspoon vanilla essence
2 tablespoons coconut flour
4 tablespoons cacao powder
¼ teaspoon baking soda
pinch of salt

Directions:
Directions:
1. Preheat oven to 180 degrees Celsius.
2. In a saucepan boil water and add sweet potato.
3. Cook the sweet potato until tender, then drain the water and allow to cool slightly.
4. Place the sweet potato into a food processor or blender and process until smooth.
5. Then add the eggs, coconut oil, rice malt syrup and vanilla and process until smooth.
6. Then add the coconut flour, cacao, baking soda and salt and process until smooth.
7. Line a metal brownie tray with baking paper and pour the mixture into the tray, smoothing the top.
8. Place the tray in the oven and bake for 30 minutes or until ready.
9. Remove the tray from oven, and let it sit for 10 minutes before removing the brownie from the pan and removing the baking paper.
10. Place the brownie in the fridge before cutting and serving.
11. Keep refrigerated.
