2 1/2 c flour
1/2 cup sugar (up to 1 cup)
1 tsp salt
1/4 tsp baking soda
3/4 cup brown sugar (up to 1 cup)
2 eggs
1 tsp vanilla
1 cup shortening
2 cup rolled oats (not minute oats)
Frosting: measurements are not exact
1 1/2 Tbsp butter (soft)
1-2 cups powdered sugar
1 tsp vanilla
milk or orange juice

Cookies:
Sift together flour, sugar, baking soda. Add brown sugar, eggs, vanilla, mixing well. Cut in shortening, add oats, work with fingers until dough just holds together. Roll dough to slightly less than 1/4 ". Cut out with cookie cutters. Bake on greased cookie sheet (350º) 7-10 minutes - until lightly browned around edges.
Use the extra sugar if you're not going to frost them.
Peanut Cookie variety:
Use extra sugar. Add 2 cup salted peanuts after oatmeal. Form into balls and flatten them.
Frosting:
Mix butter, powdered sugar, vanilla well. Add milk or orange juice 1/2 - 1 tsp at a time, stirring well after each addition. Add more sugar or milk to make it spread well. Separate into several bowls to color frosting for decorating

Especially good at Christmas - fun to bake and decorate. Also, can roll out at different thicknesses depending on which person you're trying to please - thinner for crispier cookies, thicker for chewy cookies.
