1 lb. ground beef*
1/2 c. dry rice
1/4 c. chopped onions
1/2 tsp. salt
"Tomato juice to coverballs


* Can use ground turkey if you also add 2 bullion cubes (dissolved)

Directions:
Directions:
Start tomato juice boiling in large pan.
Mix all ingredients except juice. Form into balls (about 1 inch).
Put balls in juice, cover and simmer until meat and rice are cooked.
Serve over mashed potatoes or pasta.

Rhoda Yost browns hers in a frying pan then boils them in beef broth.
