2 Eggplants
1 28 oz. chopped tomatoes
1 6 oz. tube tomato paste
3 garlic cloves
1 chopped onion
20 fresh basil leaves
2 C grated Mozzarella
3/4 C Parmesan
3 T extra virgin olive oil
1/2 T oregano
1 t salt
3/4 t black pepper

Directions:
Directions:
Preheat oven to 400, slice eggplant 1/4" thick, coat with olive oil and 1/4 t salt. Bake 30 min. Lower temp to 350. Heat remaining olive oil and saute garlic and onions. Add tomatoes and paste. Add seasonings. Simmer until slightly reduced and thickened. Layer eggplant, sauce and cheese. Bake 25-30 min.

This reminds me of Nora Locklin's recipe for eggplant, except she did not use cheese. It was my favorite recipe of hers.
