Chicken Mozzarella Pasta with Sun-Dried Tomatoes Recipe

3 large garlic cloves, minced
1 small jar (3-4oz) sun dried tomatoes in oil ( I think you could add more)Get the julienne cut ones.
8-9 chicken tenders, cut into bite sized pieces
paprika
2 c. half and half
2 c. mozzarella cheese, shredded
8 oz. penne pasta
1 T. dried basil
1/4 -1/2 t. crushed red pepper flakes ( don't cut down on this)
1/2 to 1 cup reserved cooked pasta water, or chicken broth

Drain sun-dried tomataoes before using them. Reserve 2 T. of oil for sauteing as described below.

In large pan, on med. high heat, saute garlic and sun-dried tomatoes in the 2 T. oil for one or two minutes. remove the sun-dried tomatoes from the pan and add chicken pieces salted lightly and sprinkled with paprika. Cook on med. heat for 3-5 minutes until chicken is mostly done.

Cook pasta according to package instructions and reserve the pasta water. Drain and rinse the pasta with cold water to stop cooking.

Add tomatoes back to skillet with the chicken. Add half and half and cheese too and bring to a gentle boil. Immediately reduce to simmer and cook, stirring constantly until all cheese melts and creamy sauce forms. The sauce will be thick. Add the pasta to the skillet and stir to combine. Add 1 T. of basil and at least 1/4-1/2 t. of red pepper flakes. Stir to combine.

Now is the time for you to thin the sauce to your likeness. I added more half and half and more chicken broth to mine. Season with more salt and red pepper flakes if needed.

This is absolutely delicious and very easy. You could add more chicken to these ingredients and have enough easily for 6 people.

Serve with green salad and garlic bread.
