1 large onion
1 can cream of chicken soup
1 cup sour cream
6 cups zucchini (chunks)
1 cup shredded carrots
1 pkg. herbal stuffing mix
½ cup melted butter

Directions:
Directions:
Boil zucchini and onions for 5 minutes in salted water. Combine soup, sour cream and carrots. Drain zucchini and add soup mixture. Mix together stuffing mix and melted butter. Put ½ stuffing in bottom of 9 x 13 inch pan. Place vegetable mixture on top and cover with remaining stuffing mixture. Cover with foil and bake at 350 degrees for 35-40 minutes. Remove foil and allow to brown lightly.
