1 c. (1/2 pound or 2 sticks) unsalted butter, softened, OR 1 cup shortening
1 c. brown sugar, packed
3/4 c. white sugar
2 large eggs, well beaten
1 tsp. vanilla
1 1/2 c. all-purpose flour
1 tsp. salt
1 tsp. baking soda
1/4 tsp. nutmeg
1 tsp. cinnamon
1 1/2 c. raisins
1/2 c. chopped walnuts (optional)
3 c. rolled oats (Do NOT use instant.)

Preheat oven to 350 degrees F. Grease two large cookie sheets or line with parchment paper. In a large mixing bowl, beat butter (or shortening) until creamy. Add brown and white sugars; beat until fluffy, about 3 minutes. Beat in eggs. Add vanilla. Mix flour, salt, baking soda, nutmeg, and cinnamon together in a medium-sized bowl. Stir dry ingredients into butter-sugar mixture. Stir in raisins and nuts. Stir in oats. Spoon out dough by large tablespoonfuls onto prepared cookie sheets, leaving at least 2 inches between each cookie. Bake until cookie edges turn golden brown, 10-12 minutes. Cool 1 minute on cookie sheets. Then carefully remove them to a wire rack. Cool completely. They will be soft until completely cooled.
