1/2 cup sugar
1/3 cup pancake mix
4 cups chopped rhubarb
1/2 teaspoon cinnamon

Topping:
1 egg, beaten
1/4 cup oil
1/2 cup sugar
1/2 cup pancake mix

Directions:
Directions:
Combine sugar, pancake mix, rhubarb, and cinnamon. Toss to coat. Pour into greased 8" pan.

In another bowl, combine topping ingredients. Spread over rhubarb.

Bake at 350º for 45 minutes or until filling is bubbly and top is golden.
