1 to 1-1/2 lbs turtle meat
2 sticks butter
1 medium onion, chopped
1 cup celery, chopped
6 tbsp brandy
1/2 cup dry red wine
1 teas paprika
1 bay leaf
3-4 cloves
2 tbsp flour
4 quarts stock (4-6 cans beef broth and water)
8 stems fresh parsley
4 hard-cooked eggs, chopped
1 cup dry white wine
6 tbsp brandy
1/2 to 3/4 teas white pepper
Salt and pepper to taste

Directions:
Lightly brown the onions and celery in the butter. Add the turtle meat, cut in very small pieces, and sauté 15-20 minutes. Add the 6 tbsp brandy and flame it. Add the flour and cook for a few minutes. Add the red wine and spices. Mix well. Add the stock and bring to a boil. Reduce heat and simmer 4 hours or all day.

Just before serving, add the white wine and brandy. Cook the alcohol off. Serve garnished with parsley and hard-cooked eggs.
