Potatoes, Peeled & Cubed
Onions, Sliced
Bacon
Eggs, Beaten (Needed only if making a Frittata)
Olive Oil, Salt & Pepper

Directions:
In non stick saute pan, fry bacon. Remove and reserve bacon for later. With bacon fat in the pan, add 1 T. of olive oil. Add potatoes that have been peeled and cut into small bite sized cubes, along with 1 onion that has been sliced. Season with salt and pepper and cook over medium heat, stirring occasionally. Cover saute pan with lid in the beginning as it will help the potatoes steam and cook quicker. More Olive Oil should be added if the pan appears to be dry. When potatoes are almost cooked, take lid off and allow the potato exteriors to brown and crisp. When cooked to the desired amount, add crumbled bacon bits. Serve as a great side dish.

For a Frittata continue on by adding beaten eggs, seasoned with salt and pepper, to the potato, onion and bacon mixture. The frittata needs to be flipped to continue cooking on opposite side. Makes for a wonderful meal anytime of the day.

My Mom used to make this for my Dad often and since I never liked eating eggs, she would take the potato, onion and bacon mixture out for me and then add the eggs for my Dad.
