1 1/2# Ground Beef
12 tortillas - white or corn
2 cans old el paso enchilada sauce
1 can refried beans
Cheddar and Mozzarella cheese
Black olives

Directions:
Fry beef and spoon off (or rinse off) fat. Place about 2 T of beef on tortilla which has been smeared with refried beans. Sprinkle with cheddar cheese and roll up tightly. Place in large size (9X13") pan. Heat sauce to nearly boiling and pour over enchiladas. Then sprinkle with plenty of Mozz cheese and sliced olives on top. Bake at 400º for about 15-20 minutes. I usually cover my pan with foil so that the enchiladas ddo not dry out.
These can be as hot or as mild as you make it with the enchilada sauce.
