1 cup butter
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 tsp vanilla
1 tsp baking soda
1 tsp salt
2 cups flour (+ 1/3 cup if at Windsor's elevation)
1 cup butterscotch chips
Optional - 1/2 cup nuts

Directions:
Directions:
Cream butter and sugars together. Add eggs, vanilla and mix well. Add soda, salt, flour (sifted together). stir in butterscotch chips. can add nuts. Bake 10 min. at 375º on a greased cookie sheet.

Daddy (Thom Johnson) taught me (Michelle) how to cook "at altitude" with this recipe. It really does make a difference how much flour you add by how high you are above sea-level and what the humidity is that day. Just have to experiment to get it perfect. Also, Thom likes to leave some of the dough in the refrigerator to spread on the warm cookies. Yum!
