4 oz. sliced prosciutto (or bacon)
½ cup cantaloupe, peeled, seeded, and cubed
½ cup honeydew melon, peeled, seeded, and cubed
½ English cucumber, peeled, halved and cut on the bias
½ shallot, julienned


VINAIGRETTE:
2 Tbsp. lemon (or lime) juice
6 Tbsp. olive oil
¼ cup basil, julienned
¼ cup mint, julienned
1 Tbsp. honey

Directions:
Directions:
1. Preheat oven to 350. Place prosciutto on lined baking sheet and bake 10 minutes or until crisp. Let cool completely.
2. Combine cantaloupe, honeydew, cucumber, and shallot.
3. Crush prosciutto and toss with the mixture.
4. To make vinaigrette, blend lemon juice, olive oil basil, mint and honey until smooth. Drizzle over salad and serve.
