Ingredients: FAMILY SIZED RECIPE 1 lb. dried great northern beans, soaked in water overnight. 1/2 lb. cooked ham, diced 1 cup dark brown sugar 1/3 cup catsup 1/2 tsp. salt
22 QT. ROASTER RECIPE: 6 lbs. Great Northern Beans 4-5 lbs. cooked ham, diced 4 lbs. dark brown sugar 3 1/2 - 4 cups catsup 5 tsp. salt.

Directions:Wash the beans, searching for stones, if any, and then soaked in water overnight. Cook the beans in boiling water, skimming off the foam as they cook. Beans are done when a toothpick can be inserted into a bean. Drain the water and place the beans in a roaster with all the other ingredients. Cook at 300º, stirring often to prevent sticking on the bottom of the roaster. When they begin to thicken reduce heat to 200º for 3-4 hours. |

Notes: Learned this recipe while helping Grant Brown of Brownie's Drive-In Restaurant. Grant and I used this recipe for the Annual Methodist Men's Chicken Barbeque at the William's County Courthouse, downtown Bryan, Ohio. 2015 marked the 31st year. We prepared 10 roasters each year, enough for 600+ people. Grant passed away a few years ago at the age of 92. Twenty years plus working with Grant and keeping this record secret until his death. It was fun hearing all his stories. The beans are still a hit and people are always asking if they can purchase any leftovers. Enjoy!
