3 tbsp olive oil
1 cove garlic minced
3 stalks celery chopped
3 carrots peeled and chopped
1 onion diced
10 oz box frozen spinach (unthawed) or 1 bag fresh spinach, cleaned and stems removed (i prefer the fresh so I can remove the stems)
2 cans cream of chicken soup
32 oz chicken broth
1 pkg fresh tortellini, half cooked

Directions:
Directions:
Saute garlic, celery, carrots and onions till tender. Add spinach, break up block as cooks (if using fresh, steam in pan, then chop and add to vegetables).Continue until spinach heats up. Add cream of chicken soup and water. Add chicken broth. Add tortellini. Heat all ingredients and serve hot.

Alternate: Substitute frozen broccoli for spinach
