2 chicken breasts
parsley butter (see recipe)-4 oz. butter
1 c. seasoned flour 2 cloves garlic
3 eggs 2 tbsp. parsley
1 c. bread crumbs 1 lemon
3 c. oil for frying dash red pepper
1 cauliflower
1 tsp. vinegar
2 oz. white wine
2 oz. cheddar cheese

Parsley Butter- Mix 4 oz. soft butter, 2 minced garlic clove, 4 tbsp. of chopped parsley, juice from 2 lemon, and dash of red pepper. Roll in wax paper the size of an egg and freeze. Makes two egg shape size.

Pound breast. Heat oil for frying. Place egg shape parsley butter in the center & fold over & shape like breast. Beat eggs and soak breast. Dip breast in seasoned flour, then brush with beaten egg. Then roll breast in bread crumbs. Fry for 7 mins. or until golden brown. Drain and let rest on the side.

Break cauliflower into flower pieces. Boil cauliflower in water with vinegar. Place boil cauliflower in 2 oz. butter & fry, drain. In a separate pan heat white wine and cheddar cheese until melted and add parsley. Top cauliflower with cheese sauce and serve with chicken
