2 small package instant vanilla or French Vanilla pudding
3 Cup Milk
8 oz. Cool Whip
1 box Graham Crackers

ICING:
1/3 Cup Cocoa
1 Cup Sugar
¼ Cup Milk
1 Stick Margarine
1 teaspoon Vanilla

**ÉCLAIR:
Mix together pudding and milk until the mixture is thick.

Fold in Cool Whip.

In a 9 “x 13” pan, line pan with Graham Crackers and half of pudding, then another layer of graham crackers and rest of pudding. End with crackers on top.

Pour chocolate mixture over top and refrigerate overnight to allow crackers to soften.

HINT: Spread a little pudding on bottom of pan so crackers won’t slide.

**ICING:
Melt butter in saucepan.
Add other ingredients and bring to boil for 1 minute.
Remove from heat; add 1 teaspoon vanilla. Set aside to cool.

OR

1 Can Chocolate Fudge Frosting

Place frosting in a glass bowl and microware for 20 seconds to thin. Pour frosting over the Graham Crackers to cover. Serves 10.
