1-2 Pounds Chicken Pieces
1 Cup Buttermilk
2-1/2 Cups All-Purpose Flour
1 Tbsp. Black Pepper
2 Tbsp. Creole Seasoning
1 Tsp. Dried Oregano
4 Cups Vegetable Oil

Wash chicken and pat dry with paper towels. Place chicken in a bowl with buttermilk and marinate for 20-30 minutes. Mix flour, black pepper and creole seasoning in a one gallon plastic bag or paper bag. Remove chicken from buttermilk and place in bag with flour and shake well to coat. In a large skillet, heat the oil on medium high. Once oil is hot, add chicken and cover with a lid. Cook the chicken for 5-7 minutes and turn over with a fork once it is brown on one side. Cook chicken until the juices run clear. Remove and drain on paper towels.

If self-rising flour is used, reduce the amount of creole seasoning; otherwise, the chicken will be too salty. Also, feel free to add other seasoning such as paprika, cayenne pepper, dried sage, and poultry seasoning in small amounts (e.g., 1/2 tsp.). Make sure your oil is hot before adding the chicken and do not crowd the skillet. I drop a pinch of flour to the oil to test if it's hot enough.
