4 Tbl Butter
1 Medium Leek
1 Large Head Cauliflower ( flowers cut or broken into bite size pieces)
1 Medium Potato ( peeled & diced )
1/4 Cup Flour
4 Cups Chicken or Vegetable broth
2 Cups Heavy Cream
A little Salt

Directions:
Directions:
In a large pot over medium heat add butter and cook leeks until tender, 5-7min. Then add flour stirring well until incorporated. Add stock, cauliflower & potatoes and bring mixture to a boil. Reduce heat to a medium low simmer for 20 minutes. Remove soup from heat and let cool for 5 minutes. Add soup in batches ( if you can't do it all at once ) to a blender or food processor and puree until smooth. Return to original pot over medium high heat to a simmer. Reduce heat to low and simmer 10 minutes to allow soup to thicken.
