6 large Idaho baking potatoes
2 c all-purpose flour
1/2 t cayenne
2 t thyme
salt and pepper, to taste
1/2 c milk (approximately)
vegetable oil for frying

Directions:
Directions:
Preheat oven to 425º. Prick potatoes several times with a fork, then wrap in foil. Bake potatoes at 425º for about 1 hour and 15 minutes. Let cool. Cut each potato into 6 (1/4-inch) rounds. Heat oil to 375º.
Stir together the flour, cayenne, thyme, salt and pepper to taste. Dip each potato wedge into the milk and then dredge thoroughly in the seasoned flour mixture. Deep fry wedges without overcrowding for about 1½ minutes until crisp and golden. Drain on paper towels and serve.

When we lived in Beloit, WI there was a little pizza place, Shakey's, that had these potatoes on their buffet. Lisa, Eric and Cheryl loved them.
