1 1/2 cups zucchini sliced
1 1/2 cups tomato chopped
1 cup each red and green pepper chopped
¼ cup onion finely chopped
1 teaspoon olive oil
¾ teaspoon each dried basil and dried oregano (can use fresh)
¼ teaspoon pepper
1 pound boneless sole or other white fish fillets

Directions:
Directions:
Combine above ingredients (except fish) and spread in a 13 X 9 inch pan that has been sprayed with a non stick spray.
Bake uncovered at 425 º F for 35 minutes.
Layer fish over vegetables and sprinkle with salt and pepper.
Squeeze juice of ½ lemon over fish. Bake 5 -10 minutes or until fish opaque and flakes easily.
