1 cup brown sugar
2/3 cup butter
2 eggs
1 teaspoon vanilla
1 teaspoon baking powder
1 teaspoon baking soda dissolved in 2 teaspoons of boiling water
1/2 teaspoon salt
2 cups all purpose flour
1 cup dried and/or candied fruit

Directions:
Directions:
Cream brown sugar and butter together until light and fluffy.
Beat in eggs and vanilla.
Add the baking soda (dissolved in water).
Sift in flour and baking powder.
Mix well and stir in fruit.
Drop onto a greased cookie tray. Bake until golden at 350 º F.

For fruit use a combination of raisins, currents, candied fruit, and/or candied peel.
Can also use chopped dried fruit like apricots, pineapple, peach, and pear pieces,
