Brine:
1 gallon vegetable stock (4 lg cartons)
1 c kosher salt
1/2 c brown sugar
1 T black peppercorn
1/2 T allspice berries (or pumpkin spice)
1/2 T candied ginger (or ground)
1 gallon iced water

Aromatics:
1-1/2 red apples, sliced
1 onion peeled, sliced
1 cinnamon stick
1 c water
4 springs rosemary
6 sage leaves

Directions:
Directions:
Combine brine ingredients except iced water in a large pan and bring to a boil. Remove from heat to cool, and then refrigerate until chilled. 8 hours or more before cooking, placed thawed turkey into the brine, and add iced water. Turning once halfway through brining. Before cooking, rinse thoroughly and discard brine. Preheat oven to 500º, add apples, onions, and cinnamon into a bowl and micro for 5 minutes. Stuff this into the bird along with rosemary and sage. Cook uncovered for 30 mins to brown, then cover and continue cooking at 350º.
