1 c. sugar
4 tbsp. butter
1/4 c cocoa
1 egg
1 tsp baking powder
1 tsp baking soda
1 1/4 c. flour
vanilla
1 c. boiling water

Directions:
Directions:
Preheat oven to 350ºF. Prepare 8x8 cake pan (butter and lightly dust with flour)
Mix all ingredients except the boiling water.
Add the boiling water to the mixture once the oven is at the correct temp.
Pour into the pan and bake for 30 minutes. SO Moist and SO light

Great to eat just like this but if you don't mind the calories, icing really takes the cake! Fallon and Vanessa love the broiled topping (1/4 c. butter softened, 1/2 c. packed light brown sugar, 1/2 c. coarsely chopped walnuts or pecans, 1/2 c. flaked coconut and 3 tbsp light cream or evaporated milk...mix together, spread on cooled cake and then broil on low being VERY careful not to burn...cooks quick)
