2 C of Bisquick (or similar baking mix)
1 1/2 C milk
2 Tbs. sugar
2 tsp. vegetable or olive oil
1/2 tsp. vanilla extract ( or any other flavor)
2 eggs

Heat a griddle or skillet to about 375 to 400º, grease if necessary
Beat all ingredients with wire whisk or hand beater until well-blended

Pour batter by scant 1/4 cupfuls onto hot griddle

Cook until edges are dry and turn and cook until golden brown.

To make a BIG batch of pancakes, you can use a whole box of Bisquick (80 oz,)
18 eggs and 9 cups of milk. Use same mixing and cooking directions. Makes about 120 pancakes!!
