1 bag of spinach, washed
1 tomato chopped
2 cups sliced mushrooms
1 cup grated mozzarella cheese
1 cup of crumbled cooked crisp bacon
2 hard boiled eggs sliced
1/2 cup chopped peanuts

Dressing
2/3 cup oil
1/3 cup vinegar
1/3 cup white sugar
4 garlic cloves, crushed
salt and pepper to taste

Directions:
Put spinach in large bowl. Sprinkle tomato, mushrooms, bacon, cheese, peanuts, and egg over the top of the spinach. Shake all dressing ingredients in bottle and pour over all. Toss when serving at the table.

Bev gave me this recipe in 1997 and it still is very yummy. I just made it with the organic spinach in my garden.
