-Cake:
2 cups all purpose flour
2 tsp. baking powder
1 ˝ tsp. soda
1 tsp. salt
2 cups sugar
2 tsp. cinnamon
1 ˝ cups vegetable oil
4 eggs
2 cups grated carrots
1 (20 oz.) can unsweetened & drained crushed pineapple
˝ cup chopped walnuts

-Cream Cheese Frosting:
1 stick margarine
1 tsp. vanilla
Milk
3 oz. cream cheese
1 box confectioners’ sugar

Directions:

-Cake:
Sift together the flour, baking powder, soda, salt and cinnamon. Then add the sugar, shortening and eggs. Beat well for 50 to 75 good strokes. Add carrots, drained pineapple and nuts. Mix well and pour into greased and floured 13 x 9-inch pan. Bake in 350 degree oven for 40 to 45 minutes. Let cool completely before icing with cream cheese frosting which follows.
-Cream Cheese Frosting:
Cream together the margarine and cream cheese. Add the vanilla, confectioners’ sugar and enough milk to make the mixture smooth with a good spreading consistency. Refrigerate after icing.
