2 T. butter
1/4 Cup finely chopped onion
2 T. flour
2 Cups milk
3/4 t. salt
1/4t. black pepper
1- 8oz box elbow macaroni
2 Cups shredded Cheddar /Mozzarella Cheese

Directions:
Directions:
Preheat oven to 350º.
Melt butter in a medium saucepan over medium heat. If adding onions, saute onion for 2 minutes. Stir in flour and cook 1 minute, stirring constantly. Stir in the milk, salt and pepper to taste, and cook stirring constantly until mixture boils and thickens.
To the milk mixture add the cheeses and stir until they melt.
Cook macaroni according to package directions and drain when done.
Add the cheese mixture to the cooked macaroni and mix well. Turn into a casserole dish and sprinkle with extra cheese.
Bake in preheated oven for 30 minutes.
