1 package of corned beef
water
1 cup vinegar
head of cabbage cut into fourths
package of carrots
8-10 potatoes cut into quarters

Directions:
Directions:
Fill large pot with water and 1 cup vinegar. Add the corned beef and bring to a boil. Boil about 20 minutes and drain the water and vinegar. (This takes a lot of the sodium out of the corned beef).
Next refill the pot with fresh water and cover the corned beef.
Bring corned beef to a boil and then turn down the heat to simmer for several hours.
About an hour before the meat is done, add the potatoes, carrots, and cabbage and let them cook till they are done!
length of time for cooking depends upon the size of the corned beef.
Nanny always liked it to fall apart and then she knew it was done.
As you can tell from Nanny's recipe, there were no exact times and amounts but everything was done by taste and touch!!
Take meat out and
